What is Gluten?

Gluten is a protein which remains when starch is removed from cereal grains. It’s what gives dough it’s cohesiveness. Dr. John refers to gluten as “Glue times ten” for a reason. It can really make a mess in your gut lining!

Gluten causes inflammation which is responsible for most of the diseases that plague the human body. It is being discovered that often you won’t have outward symptoms of a gluten sensitivity or intolerance. There is a predicted ratio of 1 out of every 8 people has an undetected gluten problem.

Starting a gluten-free diet can be difficult. Your body is often addicted to the gluteomorphin in gluten which is an opioid peptide (like an opiate) that is released when digesting gluten. When you suddenly stop eating gluten you may go through withdrawal symptoms much like a drug addict would. Don’t let that stop you! It is vital that you stick to the diet. The symptoms usually stop within 2-5 days.

Prolonged exposure to gluten can lead to autoimmune diseases, leaky gut syndrome or Celiac Disease.
